KITCHEN GARDEN PROGRAM
When life gives you lemons, make lemonade! I had the pleasure of making fresh mint infused lemonade with the P/1s last week to celebrate their 100 days at school.
The lemons were kindly donated by Alby’s family and the mint was picked fresh with their little hands from our school garden!
It was such a success with many thumbs up that I thought some of you might like to recipe to try at home.
For the simple syrup:
- 1 cup of sugar
- 2 tsp lemon zest
- 10 fresh mint leaves (we added more)
- 1 cup of boiling water
For the lemonade:
- 1 cup of lemon juice
- 4/5 cups of cold water
Instructions:
- Place sugar, zest and mint leaves in a large jug.
- Pour in 1 cup of boiling water and stir until sugar dissolves
- Let it sit for 10 minutes while you juice your lemons
- Juice lemons and add to the jug
- Add your cold water and put in the fridge for an hour or more to infuse (we left ours overnight)
- Strain and enjoy!
